Extraordinary Chilli Con Carne Mix

This dish was originally, as the Spanish translation says, ‘chillies with meat’. There are many arguments about what goes into a chilli or not. Ours is made with coffee, which adds a great depth of flavour. It can also be used to make a vegetarian dish, where the meat is replaced by e.g. lentils or potatoes.

INGREDIENTS: Sea Salt, Demerara Sugar, Paprika, Coriander, Cummin Seed, Chilli Flakes, Oregano, Chilli Pod

Description

Our Recipe:

2 Tbsp of olive oil

500g beef steak mince

Vegetarian option use lentils

2 red onions, chopped

2 cloves of garlic, minced

2 tomatoes, chopped

300ml freshly brewed coffee

100 ml water

1 long green chilli, finely chopped (optional, hotter)

1 can (400g) of red kidney, mixed or aduki beans, drained

1 Tbsp of tomato puree (optional, leave out for a more authentic taste).

Heat the oil in pan on high heat and brown the mince. Add the onions and fry until slightly Browned, turn down heat and add the Garlic and the contents of the Extraordinary Chilli Con Carne Mix and cook for another 2 min and then add the coffee and water. Simmer covered for 30min, add the tomatoes and green chilli (optional) and cook for another 10min before adding the beans (add a spoonful of tomato puree, if you a thicker, tomato sauce), cooking for a further 10min, only partially covered. Serve with rice, tacos or nachos.
