Chick’n’ Mix Casserole

Our newest mix is for a chicken casserole. We wanted it to be versatile so our daughter named it Chick’n Mix. You can make it with layered potatoes or pasta or any other way you fancy… Let us know!

Put in your favourite vegetables or leave out the chicken for the vegetarian version.

Ingredients: Paprika, Sea Salt, Cumin, Thyme, Marjoram, Mustard Seed, Black Pepper, Cayenne, Nutmeg

2 tablespoons of olive oil

3 chicken fillets, diced

(Vegetarian option use mushrooms & veg)

7cm of Chorizo, halved and sliced

1 red onion, chopped

1 medium leek, sliced

1 clove of garlic, chopped

1.2kg potatoes, approx. 6 big ones

OR 250g Fusilli Pasta

½ head of broccoli, broken into small florets

OR / and any other vegetables of your choice

1 tsp of honey

200ml water (omit if using pasta)

150ml of cream (250ml for pasta)

Grated cheese

Parboil the potatoes for approx. 15 minutes, peel and slice.

Heat the oil in a pan and fry the onion, garlic, chorizo and chicken until cooked, add the casserole mix, leeks, broccoli and water and fry for a further 5 min. Take off the ring and add the cream. Lay half the potato slices at the bottom of a casserole dish, then pour over half of the chicken mix, repeat and sprinkle with the grated cheese.

If using pasta, cook the pasta al dente and combine with the chicken mix in a casserole dish and sprinkle with the grated cheese.

Cook in preheated oven at 180°C until golden.
