4-7 lb. Boneless beef roast
2 tbsp olive oil
2 garlic cloves, crushed
Mix together Irish Roast Beef Seasoning Blend with crushed garlic and olive oil. Rub the prepared Seasoning Blend onto the roast, covering completely.
Place roast fat side up in a shallow roasting pan and place uncovered in the middle of the oven at 160C (gas mark 3 0r 325 F) and roast approximately 35 minutes per pound or to your liking. Remove roast from the pan and add 250 ml red wine to juices and deglaze the pan over low heat. Transfer liquid to a saucepan with 3 tbsp elderberry or red currant jelly. Blend and simmer, then thicken with 1 tbsp corn flour mixed with 1 tbsp water. Pour over sliced beef and serve at once.
