4 x 180g (6oz) salmon fillets, skinned
2 Tablespoons olive oil
2 Tablespoons butter
Preheat the oven to 230C (gas mark 8, 450F). Season the salmon fillets generously with salt and coat both sides of fillets with the Spicy Salmon Coating Mix. Heat the oil in a large, oven-proof skillet. When the oil is hot, add the salmon, skinned side down.Add the butter and shake the pan to blend the oil with the butter. Cook the salmon over high heat for 3 minute, then transfer the skillet to the oven and roast for 2 minutes. Turn the fillets over and roast for 2 minutes. Turn the fillets over and roast them for about 4 more minutes, depending on the thickness of the fish. Serve each fillet with a wedge of fresh lemon.
